Tofu scramble is tasty, creamy and easy to make. High in protein and slow to digest, this breakfast will keep you satisfied through to lunch.
Heat oil in a pan over medium heat; saute onion until softened for about 2 minutes. Add carrot to onions and saute until slightly softened, for another 2 minutes. Add mushrooms to onion mixture and saute until mushrooms are slightly tender.
Stir tofu, turmeric, cumin, salt, and pepper into onion mixture; saute until tofu is cooked through, about 2 more minutes.
